Perfect for Winter! Red Wine & Shallots Lamb Shank tray roast recipe, made using AVO Red Wine & Shallots Marinade.

The marinade is a robust combination of traditional hearty flavours, suitable for all meats but particularly good with lamb.

Red Wine & Shallots Lamb Shank


  1. Take the lamb shank and French trim the end of the leg bone until it is clean
  2. Place in a bowl and marinade with AVO Red Wine & Shallots Marinade at a usage rate of 8-10%
  3. Slice and dice your roasting vegetables – here we’ve used carrots, baby potatoes, swede & parsnips
  4. Place in a deep oven ready foil tray and spread evenly
  5. Place your marinaded lamb shank in the centre on top of the vegetable mix with the French trimmed part at the top
  6. Finally, place one sprig of rosemary in the bone marrow where the French trimmed is so it sticks out
