The manufacture of poultry sausage products has always posed significant challenges to processors and butchers alike. During production, the poultry skin and fat, a microbiologically sensitive ingredient which is often contaminated with less desirable constituents such as feather shafts and quills is used extensively to add succulence, mouthfeel and flavour.
Further to ongoing customer feedback, IFI have sourced a new flavoured product which provides the industry with a credible, safe and cost effective alternative. AVO Vegetable Cream is manufactured from premium quality rapeseed oil which has been processed in such a way that it can be used to substitute poultry skin and fat by up to 20%. It provides a clean flavour profile without the presence of unpleasant flavours or odours, is convenient, easy to use and store, offers superior mouthfeel, enhances product quality and consistency and reduces microbiological risk.
